You should even destroy them according to GDPR because there is no legal basis by which these documents will be useful to you. Most often, these are certificates for:

If you have established cooperation with an authorized company for safety at work, so if you have someone who accompanies you in occupational safety, be sure to let them know that person xy is no longer an employee of your company.
All of the above training certificates that you have made for that employee are the technical property of the company because you have submitted the financial cost of these trainings.
There are different opinions in the industry what to do with these papers and how to deal with the now former worker – although you do not have to give them to the employee who is leaving, you will no longer need these documents. Unfortunately, i often encounter people in practice who have undergone a certain training five or more times just because they have not been able to prove that they have already undergone it.
My position is to allow the person who is leaving to take a certificate of initial fire extinguishing training and (if he did it with you) to provide first aid because these trainings are done once in a lifetime and are transferable from workplace to work since they do not refer to your company but to the name and surname of a trained person. With this act, you will help not only the person who is leaving, but also his future employer and the company from occupational safety that accompanies that employer.
